Eastern Shore Honey Glazed Chicken

Eastern Shore honey adds delicious flavor to this citrus-y grilled chicken marinade.

Ingredients

SERVINGS: 4 Serving(s)
  • 1 whole chicken, quartered, or 4 chicken leg quarters
  • 2 tablespoons minced garlic
  • ⅓ cup extra-virgin olive oil
  • ½ cup fresh-squeezed orange juice
  • Fresh cracked black pepper and sea salt to taste
FOR THE GLAZE
  • 1 cup fresh-squeezed orange juice
  • ¼ cup Eastern Shore Honey
  • ¼ cup fresh cilantro, minced
  • 2 tablespoons rosemary, minced
  • 2 tablespoons parsley
  • 2 tablespoons thyme
  • Splash of molasses
  • Splash of balsamic vinegar
  • Salt and pepper to taste

Preparation

Mix the first four ingredients and pour over chicken in ziplock bag or in a bowl. Let it rest for most of the day in fridge. When ready, combine and simmer the glaze ingredients in saucepan over medium heat for a few minutes. Heat up the grill. Grill and baste chicken until fully cooked, 40 to 50 minutes, until the internal temperature reaches 165°. Allow to sit for a few minutes before serving.
