Ingredients

  • 2 cups all-purpose flour
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 2 teaspoons kosher salt
  • ½ cup cold unsalted butter, diced
  • 3 cups Buttermilk

Preparation

Preheat your oven to 400°. In a large bowl, whisk together flour, baking soda and salt. Cut the butter into the flour mixture until it’s course. Make a well in the center of the flour mixture, pour in the buttermilk and combine. Do not overwork the dough.

Lightly dust a baking sheet with flour. Form dough mixture into a round loaf about 8 inches in diameter and place it on the baking sheet. Using a knife, cut a cross into the top of the loaf. Bake for 1 hour until browned. Let rest for 20 minutes before serving.
