Sausage-Kale Soup Simple and Delicious

HINT: Double the recipe and serve for lunch the next day.

Ingredients

  • 1 pound sweet Italian Sausage (nitrate-free, turkey or pork)
  • 2 tablespoons coconut oil
  • 1 cup chopped sweet onion
  • 2 garlic cloves, chopped
  • 4-5 Yukon Gold Potatoes or sweet potatoes, cut into small bite-sized pieces
  • 4 cups no-sugar-added chicken stock or chicken bone broth (my preference)
  • 1 28-ounce BPA-free canned diced tomatoes, drained
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 4-5 cups fresh kale, torn into bite-sized pieces

Preparation

Add the sausage to a food processor and process until crumbled. In a Dutch oven over medium-high heat, add the oil, then the crumbled meat. Cook the meat until it browns (4-5 minutes). Next, add the onion and garlic, cook, until the onion softens.

Then add the chicken stock, stirring constantly. Add the tomatoes, potatoes, salt, and pepper and cook on medium-low heat until the potatoes are tender. Stir in the kale and cook on low heat until the kale softens (approximately 1 -2 minutes).
