Watermelon and Heirloom Tomato Salad from Matt's Fish Camp

Peel and cube watermelon and halve tomatoes. Tear mint leaves by hand. Place all ingredients into a large bowl. Set aside.

For simple syrup, place sugar, lime juice, lime zest, and water into a small pot. Dissolve sugar and bring to a boil. Add agave and simmer for 10 minutes. Set aside to chill. Add syrup to the fruit bowl and toss.

  • ½ cup sugar
  • 6 limes juiced
  • zest of limes
  • ½ cup water
  • ½ cup agave
