Linda's Corn Shrimp Fritters

Ingredients

SERVINGS: 6 Serving(s)
  • ½ cup flour
  • ½ teaspoon baking powder
  • ¾ teaspoon salt
  • ¼ teaspoon garlic powder
  • 1 large egg, separated
  • 1/3 cup finely chopped scallions (tops included)
  • 1½ cups corn
  • 1 cup shrimp, cut into pieces
  • Peanut Oil

Preparation

Mix dry ingredients then add the shrimp, corn, onion, and egg yolk. Whip the egg white until very still but still moist. Gently fold in into the mixture. Chill for a least an hour or overnight.

Heat oil in sauté pan. Drop shrimp mixture by tablespoons into hot oil. Watch closely until evenly browned, then drain on a paper towel. Serve with a chipotle aioli or other sauce.
