Pink Tequila Fizz

When the sun is blazing there’s nothing more refreshing than a sparkling cocktail that takes its inspiration from Mexico. If you’re a fan of Margaritas and other tequila-based drinks, this Pink Tequila Fizz is for you. Similar to the Paloma, one of Mexico’s most popular drinks with its bracing tequila edge and refreshing pink grapefruit juice, our version takes it up a notch by combining fresh pomegranate arils and notes of hibiscus from bitters. Then, just because it’s summer, top the whole drink off with a healthy splash of rosé champagne.

Ingredients

SERVINGS: 1 Cocktail
  • 1½ ounce (45ml) tequila
  • ½ ounce (15ml) pink grapefruit juice
  • ½ ounce (15ml) lime juice
  • ½ ounce (15ml) simple syrup
  • 3 drops hibiscus bitters (optional)
  • Crushed arils of ½ pomegranate

Preparation

Shake all the ingredients with a generous amount of ice. Strain the mixture into a highball glass filled with ice. Top with rosé Champagne. Garnish: Rim the glass with salt for an extra kick.
