Sausage Gravy and Biscuits, Two Ways

Two chefs take on a traditional favorite! Chef Bill Wallen likes to do old school. His daughter Chef Jessica likes a twist, and calls hers the Redneck Benny. Great for feeding a hungry crowd of family and friends - either way, and any time of day.

Ingredients

SERVINGS: 4 Serving(s)
  • 1 pound ground sausage
  • ¼ cup small diced onions
  • ¼ cup flour
  • 2½ cups milk
  • Salt and pepper to taste

Preparation

Cook sausage and onions in a large skillet over medium heat 5-6 minutes or until thoroughly heated, stirring frequently. Whisk in flour and gradually add milk. Cook until mixture comes to a boil and thickens, stirring constantly. Reduce heat to medium-low; simmer 2 minutes, stirring constantly. Season to taste with salt and pepper.

Plating is where they find their own road:

Dad: Take a warm biscuit and cut in half. Place on a plate. Pour ½ cup of gravy over the biscuits. Serve with your favorite home fries.

Daughter: Take a warm corn muffin and cut in half. Place it on a plate and smother it with ½ cup of sausage gravy. Top with 2 over easy eggs. Serve with your favorite home fries.
