Baked Pineapple Casserole

Simple and sweet, with the consistency of a bread pudding, this dish complements a holiday ham, tenderloin or turkey.

Ingredients

  • 4 ounces butter, softened
  • ¾ cup sugar
  • 4 large eggs
  • 1 20-ounce can crushed pineapple with juice
  • 5 slices white bread, torn
  • Pinch of Cinnamon and Nutmeg (optional)

Preparation

Preheat the oven to 350°F and grease a medium-sized casserole dish. Beat sugar and butter in a mixing bowl until creamy. Add eggs, beating one at a time, then stir in cinnamon and nutmeg. Mix in crushed pineapple and bread, and transfer to the casserole dish. Bake until set and golden brown, about 1 hour.
