Ingredients
- 1½- 2 pounds boneless skinless chicken breast cut into bite-sized strips
- 2 tablespoons. blackened seasoning
- 3 tablespoons olive oil
- 1 onion, diced
- 1 green pepper, diced
- 2 ribs celery, sliced
- 2 cloves minced garlic
- ⅓ cup vermouth or white wine
- ½ cup chicken stock
- ½ cup heavy cream
- Grated Parmesan cheese (optional)
- ¼ cup chopped parsley for garnish
- 1 pound penne pasta (or pasta of your choice)

Preparation
DIRECTIONS
Prepare water for boiling the pasta.
Toss chicken in blackening seasoning. Heat a 12 inch skillet over medium high heat. Add 1 tablespoon olive oil. When oil begins to lightly smoke, add chicken pieces. Brown on all sides, about 2 minutes total. Reserve chicken in a medium bowl.
Add 2 tablespoons olive oil to the empty pan. Sauté onions, peppers, and celery until slightly softened, about 3 minutes. Stir frequently. Push vegetables to the outside of the pan and mash garlic into the bottom of the pan to lightly cook it. Then stir garlic and vegetables together. Add vermouth or white wine. Reduce by half. Add chicken stock and cream. Simmer.
At this point add noodles to boiling water. Reserve ¼ cup pasta water for later.
Add chicken and accumulated juices into vegetable mixture. Turn off heat. Add ⅓ cup Parmesan and hot sauce if desired. If your sauce is too thick add the reserved pasta water.
Mix sauce with noodles. Garnish with parsley.
