  • ¼ teaspoon fresh lemon juice
  • ¾ teaspoon mayonnaise
  • Salt and pepper to taste
  • Pinch of cayenne pepper
  • 3 ounces fresh chopped Maine lobster
  • ¼ ounce fine herbs (parsley, tarragon and chives)
  • Split-top roll
  • Butter for the roll

Preparation

Mix the mayonnaise with the lemon. Add salt, pepper and cayenne pepper. Toss the lobster in lemon mayo. Spread butter on the roll and toast. Pack the roll with the lobster and garnish with the fine herbs.
