Lobster Roll from Dogfish Head's Chesapeake & Maine

To assemble, put the avocado, two pieces of bacon and half of the cheese blend on a piece of ciabatta. Add a second piece of ciabatta, and top with onion jam, the remaining two pieces of bacon, Swiss cheese and the rest of the cheese blend. Top with the third slice. Bake at 450° for two to three minutes.
For the Palo Santo Onion Jam
Saute onions, shallot, garlic until caramelized. Season with salt and pepper. Deglaze the pan with Palo Santo and sugar. Cook until the liquid reduces by half. Fold in thyme and check the seasoning.
