Painted Stave Strawberry Basil Lemonade Punch

Ingredients

SERVINGS: about 2 quarts, serves 10 -15
  • 1 750 ml bottle Painted Stave Gin
  • ¾ pound fresh strawberries
  • 1 ounce fresh basil
  • 25 ounces club soda
  • 1 cup white sugar
  • ½ cup water
  • 8 ounces fresh lemon juice

Preparation

Prepare a rich simple syrup by mixing sugar and water in a pot and bringing to a boil, stir until all sugar is dissolved and mixture is clear. Set aside to cool (can be made up to 1 week ahead of time).

Add gin to a large container, enough to hold 1 gallon. Wash basil, then separate 3 basil leaves to be used for garnish later. Take remaining leaves, bruise them and add to the gin to infuse. Wash strawberries and set aside half to be used later for garnish. Core remaining strawberries, then crush and add to gin. Allow basil and strawberries to infuse in gin for 2-3 hours, then strain out all solids.

In serving bowl/dispenser, stir together infused gin, lemon juice, rich simple syrup and club soda. Add reserved basil and strawberries for garnish. Serve on ice or chill and serve.
