Ingredients

  • 1 pound white perch, skinless fillets
  • 1½ cups arugula
  • 2 teaspoons fresh oregano
  • 1 cup grilled leeks
  • 4 teaspoons roasted garlic
  • 2½. teaspoons salt
  • 1¼ teaspoons ground black pepper
  • 3 tablespoons stoned ground mustard
  • 2 eggs
  • 1⅔ tablespoons lemon juice
  • ¼ cup corn meal
  • ¼ cup olive oil

Preparation

Medium dice the fish. Rough chop the arugula. Fine chop the oregano. Cross slice the leeks. Combine all ingredients into a mixing bowl except the cornmeal. Once all other ingredients are combined, add the cornmeal. Let set for at least 1 hour. Form into cakes and pan fry in a 10” saute pan with ¼ cup olive oil.
