Broccoli Rabe with Roasted Garlic

Ingredients

  • 1 bunch broccoli rabe
  • ¼ teaspoon crushed red pepper flakes, or more to taste
  • ½ teaspoon Fresh ground sea salt
  • 10-15 roasted garlic cloves
  • ½ cup extra virgin olive oil

Preparation

Put a pot of water on to boil and have a bowl of ice water next to it. Plunge the broccoli rabe in boiling water for 30 to 45 seconds and then remove with tongs and plunge in ice water.

Put garlic cloves in a small pan and cover with olive oil. Over medium heat, cook the cloves slowly until they are the color of caramel. Remove from heat and allow to cool. Reserve the oil and set aside roasted garlic cloves. Heat two tablespoons of garlic infused olive oil in the pan over high heat. In a single layer sear the broccoli rabe on one side and then the other. Add the roasted garlic cloves, crushed red peppers and sea salt and heat through cooking till wilted. Toss and serve
