SERVINGS: Makes 4
- 4 ears of shucked corn
- ½ cup mayonnaise
- 1 lime
- ½ cup grated parmesan cheese
- Optional: ancho chili powder
Preparation
Cook the corn to your liking either by boiling or grilling (grilling adds a nice char flavor!) In a bowl, whisk juice of ½ lime with the mayonnaise. Spread the mayo on the hot cooked corn and roll the corn in the parmesan cheese on a plate. Dust with ancho chili powder. Serve with more lime on the side.
