Simple Savory Sweet Potatoes

Sweet potatoes are root vegetables high in fiber, low in protein. They are an excellent source of the antioxidant beta carotene (our bodies convert it into Vitamin A) and are also rich in Vitamin C and Potassium.

Ingredients

  • 4-5 sweet potatoes
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic
  • salt to taste
  • pepper to taste

Preparation

Chop sweet potatoes. Coat with oil. Press or mince garlic, toss in potatoes and sprinkle with salt and pepper. Bake at 375 degrees for 20-30 minutes (watch for edges crisping.)
