Ingredients
- 1½ cups diced watermelon
- 1 cup cherry tomatoes, quartered
- ½ red onion, thinly sliced
- ½ jalapeno chile pepper, thinly sliced
- 3 tablespoons chopped cilantro
- Juice of 2 limes
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 avocado, diced
Preparation
In a medium bowl, combine the watermelon, tomatoes, onion, jalapeno pepper, cilantro, lime juice, salt, and black pepper. Stir well. Right before serving, stir in the avocado. Serve this with fish or chicken—or serve with tortilla chips for dipping!
TIP
If you want the avocado to stay pretty and not turn brown, add it right before serving. As the salsa sits, the avocado adds creaminess to the salsa. While it’s still delish, it can turn the salsa into an unappealing shade. Toss in those avo chunks right before serving, and you’re good to go!
